HAZELNUT COOKIES

INGREDIENTS
½ cup hazelnut meal
¾ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon baking soda
½ teaspoon baking powder
4 tablespoons unsalted butter, cold
¼ cup heavy cream
1 large egg yolk

GLAZE
⅓ cup dark chocolate chips
2 teaspoons coconut oil

DIRECTIONS
1. Preheat the oven to 400F.
2. In a medium bowl, whisk together the hazelnut meal, flour, salt,
baking soda and powder.
3. Next, dice the butter, and add it to the flour mixture. Work the
butter into the flour using your fingers or a pastry blender.
4. Stir in the heavy cream and egg yolk until a soft dough forms.
5. Scoop out 12 balls of dough, rolling in your hand lightly to form
balls.
6. Place on a baking sheet lined with parchment and bake for 10
minutes.
7. Let cookies cool on the pan for 5 minutes and then move to a
wire rack to cool completely.

GLAZE
Heat the chocolate chips and coconut oil at 50% power in the microwave,
stirring every 20 seconds until melted. You can drizzle to save more glaze
or you can dip it into the melted chocolate.
